1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

8 oz egg noodles

1 cup sour cream

1 can (10.5 oz) condensed cream of mushroom soup

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tsp dried parsley

1 tsp salt

½ tsp black pepper

½ tsp paprika

1 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: In a large pot, bring water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until translucent. Add the ground beef, breaking it up as it cooks until browned. Drain any excess fat.

        Combine Ingredients: In a large mixing bowl, combine the browned beef mixture, cooked noodles, sour cream, cream of mushroom soup, mixed vegetables, parsley, salt, pepper, and paprika. Stir until well combined.

          Layer the Casserole: Transfer the mixture to a greased 9x13 inch casserole dish. Spread evenly and sprinkle shredded cheddar cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
