4 bone-in, skin-on chicken thighs

2 cups long-grain white rice

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 cups chicken broth

1 can (14.5 oz) diced tomatoes (with juice)

1 cup heavy cream

1 tsp paprika

1 tsp dried oregano

½ tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, paprika, and cayenne pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken, skin side down, and sear for about 5-7 minutes or until golden brown. Flip and cook for an additional 5 minutes. Remove and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for another 1-2 minutes until fragrant.

      Combine Ingredients: Stir in the rice, then add the diced tomatoes with their juice and the chicken broth. Mix well and bring to a simmer.

        Add the Chicken: Return the seared chicken thighs to the skillet, skin side up. Ensure the chicken is partially submerged in the liquid. Cover and let it simmer over low heat for about 25-30 minutes or until the rice is cooked and has absorbed most of the liquid.

          Create Creamy Sauce: Remove the chicken briefly and stir in the heavy cream. Return the chicken to the skillet and cover again. Cook for an additional 5-10 minutes on low heat until the sauce thickens slightly.
