1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

1/2 cup graham cracker crumbs

Extra graham cracker crumbs and mini marshmallows for topping

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Beat in the egg and vanilla extract, mixing well to combine.

        In another bowl, whisk together the flour, baking soda, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Stir in the chocolate chips, mini marshmallows, and graham cracker crumbs until evenly distributed.

              Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie (the cookies will spread).

                For extra gooeyness, top each cookie with additional mini marshmallows and a sprinkle of graham cracker crumbs.

                  Bake for 10-12 minutes, or until the cookies are lightly golden around the edges but still soft in the center.

                    Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
