8 oz fettuccine pasta

1 lb smoked sausage (e.g., Andouille or kielbasa), sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 teaspoon Cajun seasoning (adjust to taste)

1/2 teaspoon smoked paprika

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for extra heat)

Instructions
 

Cook the Fettuccine: Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until the onion is translucent, about 4-5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Sauce: Sprinkle the Cajun seasoning and smoked paprika over the sautéed vegetables, mixing well to coat. Pour in the heavy cream, stirring to combine. Let the mixture simmer for about 3-4 minutes until it thickens slightly.

          Combine Pasta and Cheese: Gradually stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

            Mix it All Together: Return the cooked sausage to the skillet and toss in the drained fettuccine. Stir until everything is well coated with the Cajun Alfredo sauce. Season with salt and pepper to taste. If using, add red pepper flakes for extra heat.

              Serve: Divide the Smoked Sausage Cajun Alfredo among plates or bowls. Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
