1 (10 oz) can of diced tomatoes with green chilies (Rotel)

1 (8 oz) package of cream cheese, cubed

1 lb ground beef or sausage, cooked and crumbled

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions

Brown the Meat: In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain any excess fat and set aside.

Prepare the Slow Cooker: In a slow cooker, combine the cooked meat, diced tomatoes with green chilies (including juice), cubed cream cheese, diced onion, garlic powder, cumin, chili powder, salt, and pepper.

Mix in the Cheeses: Add the shredded cheddar and pepper jack cheese to the slow cooker. Stir until everything is evenly combined.

Cook: Cover the slow cooker and cook on low for about 2-3 hours, stirring occasionally, until the dip is hot and the cheeses have melted.

Serve: Once melted and creamy, serve your Rotel dip warm with tortilla chips for dipping. Enjoy!
