1 pound (450g) Irish bacon (or thick-cut bacon), cut into pieces

1 pound (450g) pork sausages, cut into bite-sized pieces

4 large potatoes, peeled and sliced

3 large carrots, sliced

1 large onion, sliced

4 cups chicken or vegetable broth

2 tablespoons fresh parsley, chopped

1 teaspoon thyme

1 bay leaf

1 teaspoon black pepper

Prepare the Meat: In a skillet, cook the pieces of bacon over medium heat until they’re browned but not crispy. Remove and drain on paper towels.

    Sear the Sausages: In the same skillet, add the sausage pieces and sauté until browned on all sides. Drain excess fat.

      Layer the Ingredients: In the slow cooker, layer half of the sliced potatoes, half of the sliced carrots, and half of the sliced onions. Top with the cooked bacon and sausage.

        Add Remaining Vegetables: Layer the remaining potatoes, carrots, and onions on top of the meat mixture.

          Pour in the Broth: Carefully pour the chicken or vegetable broth over the layered ingredients in the slow cooker.

            Season: Add thyme, bay leaf, black pepper, and salt to taste. Gently stir the top layer to ensure the seasoning is evenly dispersed without disturbing the bottom layers too much.

              Cook: Cover the slow cooker and set it on low heat for 6-8 hours or high heat for 3-4 hours until the potatoes are tender and the flavors have melded beautifully.

                Finish and Serve: Once cooked, remove the bay leaf and sprinkle with fresh parsley before serving.
