4 medium potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 carrots, sliced

2 celery stalks, diced

1 pound smoked sausage or kielbasa, sliced

4 cups vegetable broth

1 cup milk or heavy cream

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the chopped onions and garlic, sautéing until the onions become translucent (about 5 minutes).

    Transfer the sautéed onions and garlic to your slow cooker.

      Add the diced potatoes, sliced carrots, diced celery, and sliced sausage to the slow cooker.

        Pour in the vegetable broth and add dried thyme, paprika, salt, and pepper to taste. Stir everything together until well combined.

          Cover and cook on low for 6-7 hours or on high for 3-4 hours until the vegetables are tender.

            Once done, use a potato masher to slightly mash some of the potatoes in the soup for a creamy texture (you can leave some chunks for heartiness).

              Stir in the milk or heavy cream and let the soup heat through for about 10 minutes on low before serving.

                Taste and adjust seasoning if necessary.
