1.5 lbs beef sirloin, cut into bite-sized pieces

1 lb baby potatoes, halved

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

1 onion, chopped

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon soy sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a skillet over medium heat, melt 1/4 cup of the butter. Add in the minced garlic and sauté for about 1 minute until fragrant. Remove from heat and set aside.

    In the slow cooker, place the beef bites, halved baby potatoes, and chopped onion.

      Pour the sautéed garlic and butter mixture over the beef and potatoes. Add the soy sauce, rosemary, thyme, salt, and pepper. Toss everything gently to combine.

        Cut the remaining 1/4 cup of butter into small pieces and scatter over the top of the mixture in the slow cooker.

          Set the slow cooker to low and cook for 6-8 hours or high for 4-5 hours, until the beef is tender and the potatoes are cooked through.

            Once cooked, give everything a gentle stir to mix the flavors together and adjust seasoning if necessary.

              Serve hot, garnished with fresh chopped parsley for a pop of color.
