1.5 lbs beef sirloin, cut into 1-inch cubes

1 lb baby potatoes, halved

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef cubes generously with salt, pepper, paprika, dried thyme, and dried rosemary. Toss to coat evenly.

    Sear the Beef (Optional): In a skillet over medium-high heat, melt 2 tablespoons of butter. Add the seasoned beef cubes in batches and sear them for about 2-3 minutes until browned on all sides. This step adds flavor but can be skipped if you’re short on time.

      Prepare the Slow Cooker: In your slow cooker, add the halved baby potatoes. Pour in the soy sauce and Worcestershire sauce, mixing them a bit with the potatoes.

        Add the Garlic Butter: In a small saucepan, melt the remaining butter over low heat. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant. Carefully pour the garlic butter over the potatoes.

          Combine Everything: Add the seared beef cubes on top of the potatoes in the slow cooker. Give everything a gentle toss to distribute the garlic butter, sauces, and seasonings.

            Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.

              Serve: Once cooked, give everything a gentle stir before serving. Garnish with freshly chopped parsley for a pop of color and freshness.
