2 cups cooked chicken, shredded

1 can (15 oz) corn kernels, drained

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 cup crushed tortilla chips (plus extra for topping)

Salt and pepper to taste

Chopped fresh parsley for garnish

Instructions
 

Prepare the Slow Cooker: Lightly grease the inside of the slow cooker with cooking spray to prevent sticking.

    Combine Base Ingredients: In a large mixing bowl, combine the shredded chicken, drained corn kernels, cream of chicken soup, sour cream, half of the cheddar cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper.

      Mix in Veggies: Stir in the frozen mixed vegetables until evenly distributed in the mixture.

        Layer in Slow Cooker: Pour half of the mixture into the slow cooker and spread it out evenly. Then, sprinkle half of the crushed tortilla chips over the top. Pour the remaining mixture from the bowl on top and finish with the rest of the crushed chips.

          Cook: Cover and cook on low for 4-5 hours, or on high for about 2-3 hours, until heated through and bubbly.

            Add Cheese: During the last 30 minutes of cooking, sprinkle the remaining cheddar cheese on top and cover to allow it to melt.

              Serve: Once cooked, carefully stir to combine the layers. Ladle into bowls and garnish with chopped fresh parsley.
