1 lb boneless, skinless chicken thighs, diced

1 large onion, chopped

1 bell pepper, chopped (red or green)

2 celery stalks, chopped

3 cloves garlic, minced

1 (14.5 oz) can diced tomatoes, undrained

1.5 cups chicken broth

1.5 cups long-grain white rice

2 tsp Cajun seasoning

1 tsp dried thyme

1 bay leaf

1 cup frozen peas

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Start by preparing your ingredients: chop the onions, bell pepper, celery, and garlic. Dice the chicken into bite-sized pieces.

    In the slow cooker, combine the diced chicken, chopped onion, bell pepper, celery, and minced garlic.

      Pour the undrained diced tomatoes and chicken broth over the mixture.

        Stir in the long-grain rice, Cajun seasoning, dried thyme, bay leaf, and a pinch of salt and pepper.

          Cover the slow cooker and cook on low for 6-7 hours, or on high for 3-4 hours, until the rice is tender and the chicken is cooked through.

            About 10 minutes before serving, stir in the frozen peas and let them heat through.

              Remove the bay leaf and adjust the seasoning if necessary.

                Serve the jambalaya hot, garnished with fresh parsley for added flavor and a pop of color.
