Slow-Cooked Pork Shoulder with Apple Cider

4-5 pounds pork shoulder

2 cups apple cider

1 large onion, sliced

4 cloves garlic, minced

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon ground cinnamon

1 teaspoon dried thyme

Salt and pepper to taste

4-5 medium apples, cored and sliced (preferably a mix of sweet and tart)

Fresh parsley for garnish

Instructions
 

In a small bowl, mix together the brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, ground cinnamon, dried thyme, salt, and pepper to create a marinade.

    Rub the marinade all over the pork shoulder, ensuring it’s well-coated. Let it sit for at least 30 minutes to absorb the flavors (or refrigerate overnight for optimal taste).

      In a large skillet, heat the olive oil over medium-high heat. Sear the pork shoulder on all sides until browned (about 5-7 minutes per side). This step adds depth of flavor.

        Place the sliced onion and minced garlic in the bottom of the slow cooker. Lay the seared pork shoulder on top, then pour the apple cider over it, followed by the sliced apples.

          Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-5 hours, until the pork is tender and can be easily shredded with a fork.

            Once cooking is complete, carefully remove the pork shoulder from the slow cooker, and let it rest for about 10 minutes. Use two forks to shred the meat.

              If desired, skim off excess fat from the cooking liquid in the slow cooker. Serve the shredded pork with the apple-cider cooking liquid and apples poured on top.
