4 pork sausages (or your choice of vegetarian/vegan alternatives)

4 large Yukon Gold potatoes, peeled and chopped

2 tablespoons unsalted butter

⅓ cup milk (or plant-based milk)

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

¼ cup vegetable broth

Prepare the Mash: In a pot of salted boiling water, add the chopped potatoes and cook for 15-20 minutes or until tender. Drain and return them to the pot.

    Make the Creamy Base: Add the butter and milk to the potatoes. Mash until smooth and creamy, seasoning with salt and pepper to taste. Keep warm.

      Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook, turning occasionally, for about 10-12 minutes or until golden brown and cooked through.

        Create the Garlic Herb Drizzle: In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the fresh herbs, followed by the vegetable broth, and allow to simmer for another 2-3 minutes. This will create a flavorful drizzle.
