1 lb large shrimp, peeled and deveined

2 tablespoons coconut oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, ends trimmed

1 cup pineapple chunks (fresh or canned, drained)

3 cloves garlic, minced

1 inch fresh ginger, minced

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon honey

1 tablespoon lime juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked jasmine rice or quinoa, for serving

Instructions
 

Prepare the Sauce: In a small bowl, whisk together soy sauce, fish sauce, honey, lime juice, and red pepper flakes. Set aside.

    Heat the Oil: In a large skillet or wok, heat coconut oil over medium-high heat until shimmering.

      Cook the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Sauté for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Stir Fry the Vegetables: In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant. Add the red and yellow bell peppers, snap peas, and pineapple chunks. Stir fry for 4-5 minutes until the vegetables are just tender but still crisp.

          Combine: Return the cooked shrimp to the skillet. Pour the sauce over the shrimp and vegetables. Stir well to coat everything evenly and cook for an additional 2 minutes until everything is heated through.

            Serve: Remove from heat and garnish with fresh cilantro.
