1 pound shrimp, peeled and deveined

1 cup orzo pasta

1 cup dry white wine (such as Sauvignon Blanc)

1 cup heavy cream

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon crushed red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package directions. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and crushed red pepper flakes, cooking for another minute until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet and season with salt and pepper. Sauté for 3-4 minutes, or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

        Deglaze with Wine: In the same skillet, pour in the white wine, scraping the bottom to deglaze. Bring to a boil and let simmer for about 5 minutes, allowing it to reduce slightly.

          Make the Cream Sauce: Lower the heat and stir in the heavy cream. Simmer for another 3-5 minutes until the sauce thickens slightly.

            Combine Ingredients: Add the cooked orzo, cherry tomatoes, and spinach to the skillet, stirring to combine. Gently fold in the cooked shrimp. Cook for an additional 2-3 minutes to warm everything through.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Adjust seasoning with additional salt and pepper if needed.

                Serve: Plate the creamy shrimp orzo and garnish with freshly chopped parsley. Serve with lemon wedges on the side for an extra zing.
