Ingredients

1 lb Brussels sprouts, trimmed and shredded

3 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

Zest of 1 lemon

2 tablespoons fresh lemon juice

½ cup pecans, chopped

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the shredded Brussels sprouts, olive oil, sea salt, black pepper, garlic powder, and lemon zest. Toss until all the Brussels sprouts are evenly coated.

Spread the seasoned Brussels sprouts in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are crispy and golden brown.

In the last 5 minutes of roasting, sprinkle the chopped pecans over the Brussels sprouts and return to the oven to toast them lightly.

Once finished, remove from the oven and drizzle fresh lemon juice over the hot Brussels sprouts. If using, sprinkle grated Parmesan cheese on top while hot for added flavor.

Toss gently to combine all the flavors, and allow to cool slightly.

Transfer to a serving platter and garnish with fresh parsley before serving.
