1 lb ground lamb (or beef for a traditional twist)

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 cup vegetable broth

1 teaspoon Worcestershire sauce

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

4 cups mashed potatoes (prepared from scratch or store-bought)

1/2 cup shredded cheddar cheese (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and diced carrots, cooking for another 3-4 minutes until the carrots start to soften.

        Add the ground lamb (or beef) to the skillet, breaking it up with a spatula. Cook until browned evenly, about 5-7 minutes.

          Stir in the tomato paste, ensuring that it's well distributed amongst the meat and vegetables.

            Pour in the vegetable broth and Worcestershire sauce; mix well. Add the peas, rosemary, thyme, salt, and pepper. Cook for an additional 5 minutes to allow flavors to meld, then remove from heat.

              In a greased baking dish, spread the meat and vegetable mixture evenly at the bottom.

                Carefully spoon the mashed potatoes over the meat mixture, smoothing it out to completely cover. If using, sprinkle shredded cheddar cheese over the top for a deliciously cheesy crust.

                  Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling.

                    Allow to cool for a few minutes before serving.
