Sheet Pan Lemon Salmon and Potatoes

4 salmon fillets

1 lb baby potatoes, halved

3 tablespoons olive oil

2 tablespoons lemon juice

2 teaspoons lemon zest

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic, oregano, thyme, salt, and pepper until evenly coated. Arrange the potatoes in a single layer on one side of the sheet pan.

      In a separate bowl, whisk together the remaining olive oil, lemon juice, lemon zest, salt, and pepper.

        Place the salmon fillets skin-side down on the other side of the sheet pan. Pour the lemon mixture over the salmon, ensuring each fillet is well coated.

          Roast in the preheated oven for 20-25 minutes or until the salmon is flaky and the potatoes are golden brown and tender, stirring the potatoes halfway through cooking for even browning.

            Once cooked, remove the sheet pan from the oven and let cool for a few minutes.

              Garnish the salmon and potatoes with fresh parsley and serve with lemon wedges on the side.
