1.5 lbs boneless, skinless chicken breasts, sliced into thin strips

2 bell peppers (red and green), sliced

1 medium red onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Flour or corn tortillas, for serving

Instructions
 

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the sliced chicken, bell peppers, and red onion.

      Drizzle the olive oil over the mixture and sprinkle in the chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.

        Toss everything together until the chicken and vegetables are evenly coated with the spices and oil.

          Spread the chicken and vegetable mixture out evenly on the prepared baking sheet in a single layer.

            Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender and slightly caramelized. Stir halfway through cooking for even roasting.

              Once done, remove the sheet pan from the oven and drizzle with fresh lime juice. Toss gently to combine the flavors.
