Seven Layer Chicken Burritos

Ingredients
  

2 cups cooked, shredded chicken

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked rice (white or brown)

1 cup shredded cheese (cheddar or Mexican blend)

1 ripe avocado, diced

1 cup salsa (your choice of mild, medium, or spicy)

1/2 cup sour cream

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt & pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a large bowl, combine the shredded chicken with olive oil, chili powder, cumin, salt, and pepper. Mix well to ensure the chicken is well-seasoned.

    Prepare the Layers: In separate bowls, get ready your black beans, corn, cooked rice, shredded cheese, diced avocado, salsa, and sour cream.

      Assemble the Burritos: Lay out one flour tortilla on a flat surface. Start layering in the following order:

        - 1/4 cup seasoned chicken,

          - 1/4 cup black beans,

            - 1/4 cup corn,

              - 1/4 cup rice,

                - 1/4 cup shredded cheese,

                  - 1/4 of the diced avocado,

                    - 1/4 cup salsa,

                      - and a dollop of sour cream.

                        Wrap the Burrito: Fold in the sides of the tortilla and then roll it tightly from the bottom to the top, making sure all ingredients are secure inside the burrito. Repeat with the remaining tortillas and ingredients.

                          Cook the Burritos (Optional): Preheat a skillet over medium heat. Place the burritos seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

                            Serve: Remove from the skillet and let them cool for a minute. Cut in half diagonally and garnish with fresh cilantro. Serve with extra salsa or sour cream on the side.
