2 filet mignon steaks (about 6-8 oz each)

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon butter

2 shallots, finely chopped

2 tablespoons whole black peppercorns, lightly crushed

1 cup heavy cream

1 teaspoon Dijon mustard

Fresh parsley, chopped (for garnish)

Prepare the Steaks: Take the filet mignon out of the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with a paper towel. Season both sides generously with salt and black pepper.

    Sear the Filet Mignon: In a large skillet over medium-high heat, add olive oil. Once hot, carefully place the filets in the skillet. Sear for about 4-5 minutes on each side for medium-rare, or adjust cooking time for desired doneness (about 130°F for medium-rare).

      Rest the Steaks: Remove the steaks from the skillet and transfer them to a plate. Tent with aluminum foil to keep warm while you prepare the sauce.

        Make the Shallot Peppercorn Sauce: In the same skillet, reduce the heat to medium and add butter. Once melted, add the finely chopped shallots and sauté until softened, about 2-3 minutes.

          Add Peppercorns and Cream: Stir in the crushed peppercorns and cook for an additional minute. Pour in the heavy cream and add Dijon mustard, stirring continuously until the sauce thickens, about 3-4 minutes. Season to taste with salt.

            Serve: Slice the filet mignon if desired and plate it. Drizzle the shallot peppercorn cream sauce generously over the top of the steaks.

              Garnish and Enjoy: Sprinkle with freshly chopped parsley for added color and flavor.
