1.5 lbs beef chuck roast, trimmed and cut into chunks

1 packet of ranch dressing mix

1 packet of Italian seasoning mix

1 jar (16 oz) sliced pepperoncini peppers (including juice)

1 tablespoon minced garlic

4 cups beef broth

1 medium onion, sliced

1 tablespoon olive oil

8 oz egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

    Season the beef chunks with salt and pepper. Brown them in the skillet for about 4-5 minutes on each side until a nice crust forms.

      Once browned, add the sliced onions and minced garlic to the pot, stirring for an additional 2 minutes until fragrant.

        Sprinkle the ranch dressing mix and Italian seasoning over the beef, then add in the jar of pepperoncini with their juice.

          Pour the beef broth over the mixture, ensuring all the ingredients are submerged. Bring it to a gentle boil.

            Reduce the heat to low, cover, and let it simmer for about 2.5 to 3 hours, or until the beef is tender and easily shreddable.

              Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir well.

                In a separate pot, cook the egg noodles according to package instructions. Drain them and set aside.

                  Combine the cooked egg noodles with the shredded beef and sauce, mixing thoroughly. Adjust seasoning with extra salt and pepper if needed.

                    Serve hot, garnished with fresh chopped parsley for a burst of color and flavor.
