1 can (15 oz) mixed beans (e.g., kidney, cannellini, and black beans), drained and rinsed

1 cup diced tomatoes (fresh or canned)

1 medium onion, finely chopped

3 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

4 cups vegetable broth

2 teaspoons dried oregano

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 tablespoon lemon juice

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables have softened.
