Ingredients

1 can (15 oz) mixed beans (e.g., kidney, cannellini, and black beans), drained and rinsed

1 cup diced tomatoes (fresh or canned)

1 medium onion, finely chopped

3 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

4 cups vegetable broth

2 teaspoons dried oregano

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 tablespoon lemon juice

Instructions

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables have softened.

Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

Mix in Spices: Sprinkle in the dried oregano, smoked paprika, and ground cumin. Stir well to coat the vegetables in the spices.

Combine Beans and Tomatoes: Add the diced tomatoes and mixed beans to the pot, stirring to combine.

Pour in Broth: Add the vegetable broth and bay leaf to the pot. Bring the mixture to a boil over high heat, then reduce to low and let it simmer uncovered for 20–25 minutes, stirring occasionally.

Season the Soup: After simmering, remove the bay leaf. Stir in the lemon juice, salt, and pepper to taste. Adjust seasoning as needed.

Blend for Creaminess (optional): For a creamier texture, you can use an immersion blender to blend a portion of the soup (about a cup) or simply mash some beans against the side of the pot with a spoon.

Serve: Ladle the soup into bowls and garnish with chopped fresh parsley.
