Ingredients

12 oz cheese tortellini (fresh or frozen)

1 lb thinly sliced beef (sirloin or ribeye)

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

3 cloves garlic, minced

2 tablespoons olive oil

2 cups heavy cream

1 cup provolone cheese, shredded (plus extra for topping)

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, sautéing for about 5 minutes until they start to soften. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook the Beef: Push the vegetables to one side of the skillet and add the thinly sliced beef to the empty side. Season with salt, pepper, and Italian seasoning. Cook for about 3-4 minutes, stirring occasionally, until the beef is browned and cooked through.

Make the Sauce: Reduce the heat to low. Pour in the heavy cream and stir well to combine with the beef and vegetables. Gradually mix in the provolone cheese until melted and the sauce is creamy. If the sauce is too thick, add a splash of chicken broth or pasta water to thin it out.

Combine: Gently fold the cooked tortellini into the creamy provolone sauce, ensuring that every piece is coated well.

Serve: Remove from heat and serve immediately. Garnish with extra shredded provolone and chopped parsley for a fresh touch.
