2 cups cooked chicken breast, diced

4 slices of crispy bacon, crumbled

1 cup cherry tomatoes, halved

1 large avocado, diced

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup green onions, chopped

Salt and pepper to taste

8 slices of whole-grain bread

Lettuce leaves for layering

Optional: Sliced pickles or jalapeños for added kick

Instructions
 

In a large mixing bowl, combine the diced chicken breast, crumbled bacon, halved cherry tomatoes, and diced avocado.

    In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and fresh lemon juice until well blended. Season with salt and pepper to taste.

      Pour the dressing over the chicken mixture and gently fold until all ingredients are coated evenly.

        Add the chopped green onions and fold them into the salad.

          Taste and adjust seasoning if necessary. You can add more lemon juice for tanginess or salt for flavor.

            To assemble the sandwiches, lay out 4 slices of bread. Place a layer of lettuce on each slice.

              Generously spoon the chicken salad mixture on top of the lettuce.

                Top with additional lettuce or sliced pickles/jalapeños if desired, then cap with the remaining bread slices.

                  Cut the sandwiches in half and serve immediately, or wrap them for a delightful picnic treat.
