3 large yellow onions, thinly sliced

1 cup non-alcoholic beer (lager or pale ale for best flavor)

4 ounces salted pork belly or pancetta, diced

2 tablespoons olive oil

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced salted pork belly or pancetta and cook until crispy, about 8-10 minutes. Remove with a slotted spoon and drain on paper towels, leaving the rendered fat in the skillet.

    In the same skillet, add the sliced onions. Sauté for about 5-7 minutes, or until they start to soften and turn translucent.

      Stir in the brown sugar, smoked paprika, and a pinch of salt and pepper; continue cooking for another 5 minutes until the onions caramelize slightly.

        Pour in the non-alcoholic beer and apple cider vinegar, scraping the bottom of the skillet to release any flavorful bits. Reduce heat to medium-low and let simmer for 15-20 minutes, stirring occasionally until the onions are tender and have absorbed the beer flavor.

          Remove the skillet from heat, and return the crispy pork to the onion mixture; stir to combine.

            Adjust seasoning with more salt and pepper if needed.

              To serve, divide the savory onion and pork mixture into bowls or plates.

                Garnish with chopped fresh parsley.
