8 oz large shell pasta

1 lb ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chopped bell peppers (red and yellow)

1 can (14 oz) diced tomatoes, drained

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the shell pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5–7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion and garlic to the skillet with the beef. Cook until the onion is translucent, about 3–4 minutes.

        Combine Ingredients: Stir in the chopped bell peppers, diced tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to blend.

          Mix Pasta and Cheeses: In a large mixing bowl, combine the cooked shell pasta with the beef mixture. Fold in 1 cup of mozzarella cheese and ¼ cup of Parmesan cheese until evenly distributed.

            Bake: Preheat your oven to 375°F (190°C). Transfer the beef and pasta mixture into a greased 9x13 inch baking dish. Top with the remaining mozzarella and Parmesan cheeses.

              Finalize Baking: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
