Ingredients
  

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 can (14 ounces) diced tomatoes with juices

2 cups fresh baby spinach

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 package (9 ounces) refrigerated cheese tortellini

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion to the pot and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the chicken broth and diced tomatoes with their juices. Add the dried herbs and stir well to combine. Bring to a simmer.

        Once the soup is simmering, add the tortellini. Cook according to package instructions, usually about 4-5 minutes, until they are tender and floating to the top.

          Stir in the fresh spinach and allow it to wilt for about 2 minutes. Season with salt and pepper to taste.

            Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
