12 large jalapeño peppers

1 lb Italian sausage (or your choice of sausage)

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

Fresh cilantro or parsley for garnish (optional)

Olive oil for greasing the baking sheet

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.

    Prepare Jalapeños: Slice each jalapeño in half lengthwise and remove the seeds and membranes using a small spoon. The more seeds you remove, the milder they will be.

      Cook Sausage: In a skillet over medium heat, crumble and cook the Italian sausage until browned and fully cooked (about 7-10 minutes). Drain excess fat if necessary and remove from heat.

        Mix Filling: In a mixing bowl, combine the cooked sausage, softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, minced garlic, onion powder, smoked paprika, black pepper, and salt. Mix until all ingredients are well combined and creamy.

          Stuff Jalapeños: Use a spoon or a piping bag to generously fill each jalapeño half with the sausage and cheese mixture.

            Bake: Arrange the stuffed jalapeños on the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until the jalapeños are tender and the cheese is bubbly and golden.
