1 pound Italian sausage (hot or mild, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, peeled and chopped

2 celery stalks, chopped

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes (with juices)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

4 cups fresh spinach, chopped

1 cup small pasta (like ditalini or orzo)

2 tablespoons olive oil

Grated Parmesan cheese for serving (optional)

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until they begin to soften.

    Add the minced garlic and cook for another minute, stirring frequently to avoid burning the garlic.

      Remove the sausage from its casing and add it to the pot. Cook, breaking it apart with a spoon, until browned (about 5-7 minutes).

        Stir in the diced tomatoes, chicken broth, thyme, oregano, salt, and pepper. Bring the soup to a gentle boil.

          Once boiling, reduce the heat to a simmer and add the pasta. Cook according to package instructions (usually about 8-10 minutes) until al dente.

            In the last 2 minutes of cooking, stir in the chopped spinach until wilted.

              Taste and adjust seasoning as necessary before serving.
