Ingredients

1 pound breakfast sausage (mild or spicy, your choice)

1 medium onion, diced

2 cups frozen hash browns, thawed

8 oz cream cheese, softened

6 large eggs

1 cup shredded cheddar cheese

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons fresh chives, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.

In a large skillet over medium heat, crumble the breakfast sausage and cook until browned, about 5-7 minutes. Add the diced onion and cook until the onion is soft and translucent, about another 3-4 minutes. Drain excess fat if necessary.

In a large mixing bowl, combine the softened cream cheese, eggs, milk, garlic powder, onion powder, salt, and pepper. Whisk until smooth and well combined.

In the greased baking dish, layer the thawed hash browns evenly across the bottom.

Spread the cooked sausage and onion mixture evenly over the hash browns. Pour the cream cheese mixture over the sausage layer, spreading it gently to cover everything.

Sprinkle shredded cheddar cheese on top of the casserole.

Bake in the preheated oven for 30-40 minutes, or until the casserole is set in the center and the top is golden and bubbly.

Remove from the oven and let it cool for about 10 minutes before slicing. Garnish with freshly chopped chives before serving.
