1 pound breakfast sausage (mild or spicy, your choice)

6 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup frozen hash browns (thawed)

1 green bell pepper, diced

1 small onion, diced

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick spray or oil.

    In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it into small pieces as it cooks. Drain excess grease and set aside.

      In the same skillet, add the diced onion and green bell pepper. Sauté for 3-4 minutes until softened. Remove from heat and let cool slightly.

        In a large mixing bowl, whisk together the eggs and milk until well combined. Add the garlic powder, salt, and pepper, mixing thoroughly.

          Layer the thawed hash browns evenly across the bottom of the greased baking dish.

            Spread the cooked sausage and sautéed onion and bell pepper mixture over the hash browns.

              Pour the egg mixture over the layers, ensuring it’s evenly distributed.

                Sprinkle the shredded cheddar cheese on top of everything.

                  Bake in the preheated oven for 30-35 minutes or until the casserole is set in the middle and the cheese is golden and bubbly.

                    Once done, remove from the oven and let cool for a few minutes before slicing.
