1 pound breakfast sausage, casings removed

6 large eggs

2 cups milk

2 cups shredded cheddar cheese

4 cups cubed bread (preferably French or sourdough)

1 cup diced bell peppers (red and green)

1/2 cup finely chopped onions

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a skillet over medium heat, crumble the breakfast sausage and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat and set aside.

      In a large mixing bowl, whisk together the eggs and milk until well combined. Season with garlic powder, dried oregano, salt, and pepper.

        In a greased 9x13 inch baking dish, layer the cubed bread evenly across the bottom.

          Sprinkle the cooked sausage, diced bell peppers, and chopped onions evenly over the bread.

            Pour the egg mixture over the entire casserole, ensuring all ingredients are well saturated.

              Sprinkle the shredded cheddar cheese generously over the top.

                Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and continue baking for an additional 15-20 minutes, until the cheese is bubbly and golden brown, and a knife inserted into the center comes out clean.

                    Allow to cool for a few minutes before slicing. Garnish with chopped fresh parsley before serving.
