1 pound breakfast sausage, crumbled

1 (30 oz) bag frozen shredded hashbrowns, thawed

8 oz cream cheese, softened

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 small onion, finely chopped

1 bell pepper (any color), diced

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Chopped chives for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked (about 5-7 minutes). Drain excess grease and set aside.

      In the same skillet, add the chopped onion and diced bell pepper. Sauté until softened, about 5 minutes.

        In a large bowl, beat the eggs and mix in the milk, softened cream cheese, garlic powder, salt, and pepper until smooth.

          Add the thawed hashbrowns, cooked sausage, and sautéed onions and bell peppers to the egg mixture. Stir until everything is evenly combined.

            Pour the mixture into the prepared baking dish, spreading it out evenly.

              Sprinkle the shredded cheddar cheese on top of the casserole.

                Bake in the preheated oven for 45-50 minutes, or until the center is set and the top is golden brown.

                  Allow to cool for about 10 minutes before slicing. Garnish with chopped chives, if desired.
