Saucy Hungarian Red Potato Goulash

4 medium red potatoes, diced

1 large onion, chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 carrot, sliced

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon caraway seeds

1 can (14 oz) diced tomatoes, with juice

4 cups vegetable broth

1 teaspoon dried thyme

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced bell pepper and sliced carrot to the pot, sautéing for an additional 3-4 minutes until they begin to soften.

        Sprinkle in the sweet paprika, smoked paprika, and caraway seeds, stirring well to coat the vegetables in the spices and allowing the flavors to bloom for about 1-2 minutes.

          Add the diced potatoes to the pot, followed by the canned tomatoes (with juices) and the vegetable broth. Bring the mixture to a boil.

            Once boiling, reduce the heat to a simmer, adding the dried thyme, salt, and pepper to taste. Cover the pot and let it simmer for about 25-30 minutes, or until the potatoes are fork-tender.

              If the goulash seems too thick, add a splash more vegetable broth to reach your desired consistency. Adjust seasonings if necessary.

                Serve the goulash hot, garnished with chopped fresh parsley for a burst of color and freshness.
