Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add the honey, egg, and vanilla extract to the butter mixture, mixing until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined. Avoid overmixing.
Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart.
Sprinkle a small pinch of sea salt flakes on top of each cookie dough mound.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers have set but are still soft.
Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
