Salmon, Shrimp, Cheesy Broccoli with Corn

Ingredients
  

2 salmon fillets (6 oz each)

8 oz shrimp, peeled and deveined

2 cups broccoli florets

1 cup sweet corn (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot of salted boiling water, blanch the broccoli florets for about 2-3 minutes until bright green but still crisp. Drain and set aside.

      In a skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, then add the shrimp and paprika. Cook until the shrimp turns pink and opaque, about 3-4 minutes. Remove from heat and set aside.

        In a mixing bowl, combine the softened cream cheese, 1/2 cup cheddar cheese, lemon juice, salt, and pepper until smooth and well blended.

          Lay the salmon fillets on a baking tray lined with parchment paper. Season with salt and pepper. Spread a generous layer of the cheese mixture over each fillet.

            In the same skillet, mix the cooked shrimp with the blanched broccoli and corn. Gently stir to combine and then spoon this mixture on top of the salmon fillets.

              Sprinkle the remaining 1/2 cup of cheddar cheese over the top of each fillet and vegetable mixture.

                Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the cheese is bubbly and golden brown.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
