1 can (14.75 oz) of pink salmon, drained and flaked

½ cup breadcrumbs (plain or seasoned)

¼ cup finely chopped onion

¼ cup finely chopped bell pepper (any color)

¼ cup fresh parsley, chopped

1 large egg, beaten

1 teaspoon garlic powder

½ teaspoon paprika

1 teaspoon Dijon mustard

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Zesty Dill Dip:

½ cup plain Greek yogurt

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, and fresh parsley.

    Add the beaten egg, garlic powder, paprika, Dijon mustard, salt, and pepper to the bowl. Mix well until all ingredients are thoroughly combined.

      Shape the mixture into patties, about ½ inch thick, and place them on a baking sheet lined with parchment paper.

        Heat the olive oil in a large skillet over medium heat.

          Cook the patties in batches, frying for 3-4 minutes on each side or until golden brown and crispy. Transfer cooked patties to a paper towel-lined plate to drain excess oil.

            For the Zesty Dill Dip, mix the Greek yogurt, chopped dill, lemon juice, salt, and pepper in a small bowl until smooth. Adjust seasoning to taste.

              Serve the salmon patties warm with the Zesty Dill Dip on the side.
