2 lbs pork loin

2 tablespoons fresh rosemary, chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 medium apples, peeled and diced

1/4 cup pure maple syrup

1 tablespoon lemon juice

1 teaspoon cinnamon

Instructions
 

Preheat the oven to 375°F (190°C).

    In a small bowl, mix together the chopped rosemary, minced garlic, olive oil, salt, and pepper to create a paste.

      Rub the rosemary mixture all over the pork loin, ensuring it's well covered.

        Place the pork in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).

          While the pork is roasting, prepare the maple apple sauce. In a medium saucepan, combine the diced apples, maple syrup, lemon juice, and cinnamon.

            Cook over medium heat for about 15-20 minutes, stirring occasionally, until the apples are tender and the mixture thickens slightly.

              Once the pork is done, remove it from the oven and let it rest for 10 minutes before slicing.

                Serve the sliced pork with a generous spoonful of maple apple sauce on top.
