Ingredients

1 pre-made pie crust (9-inch)

1 cup ricotta cheese

1 cup fresh spinach, chopped

2 large eggs

½ cup heavy cream

½ cup grated Parmesan cheese

1 tsp garlic powder

¼ tsp nutmeg (freshly grated if possible)

Salt and pepper to taste

½ cup cherry tomatoes, halved (optional)

Fresh basil leaves for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

Place the pre-made pie crust in a 9-inch pie dish and pre-bake according to package instructions until lightly golden. Remove from the oven and set aside.

In a mixing bowl, combine the ricotta cheese, fresh spinach, eggs, heavy cream, Parmesan cheese, garlic powder, nutmeg, salt, and pepper. Mix until thoroughly combined and smooth.

Pour the ricotta and spinach mixture into the pre-baked pie crust, smoothing it out evenly. If desired, gently nestle the halved cherry tomatoes into the filling, cut side up.

Bake the quiche in the preheated oven for 30-35 minutes, or until the center is set and the top is lightly golden.

Remove the quiche from the oven and let it cool for about 10 minutes before slicing.

Garnish with fresh basil leaves if desired. Serve warm or at room temperature.
