Ingredients
  

1 lb fresh crab meat (preferably lump)

1/2 lb medium shrimp, peeled and deveined

4 cups seafood stock (or fish stock)

1 medium onion, finely chopped

2 celery stalks, finely chopped

1 medium carrot, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup dry white wine

1/4 cup tomato paste

2 tbsp olive oil

1 tsp Old Bay seasoning

1/2 tsp smoked paprika

Salt and pepper, to taste

Fresh chives, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the onion, celery, and carrot. Sauté for about 5-7 minutes until softened. Stir in the garlic and cook until fragrant, about 1 minute more.

    Add the Tomato Paste: Stir in the tomato paste, cooking for an additional 2 minutes to deepen the flavor.

      Pour in the Wine: Add the dry white wine, scraping up any brown bits from the bottom of the pot. Allow it to simmer for about 5 minutes to reduce slightly.

        Add Seafood Stock: Gradually pour in the seafood stock, stirring well to combine. Bring the mixture to a gentle boil.

          Season the Soup: Add the Old Bay seasoning, smoked paprika, salt, and pepper. Reduce heat to low and let the mixture simmer for about 15 minutes, allowing the flavors to meld.

            Incorporate the Cream: Stir in the heavy cream and continue to simmer on low heat for another 5-10 minutes.

              Add the Seafood: Gently fold in the fresh crab meat and shrimp. Cook until the shrimp turn pink and are cooked through, about 5 minutes. Adjust seasoning as needed.

                Serve: Ladle the bisque into bowls and garnish with chopped fresh chives for a pop of color.
