Ingredients

2 cups Rice Krispies cereal

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips

1/2 cup mini marshmallows (optional, for extra gooiness)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream the Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture and mix until well combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

Fold in Rice Krispies: Gently fold in the Rice Krispies cereal and chocolate chips (and mini marshmallows if using) until evenly distributed throughout the dough.

Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. They will spread a little while baking.

Bake: Place the cookies in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly soft, but they will firm up as they cool.

Cool the Cookies: Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Serve and Enjoy: Enjoy these crispy, chewy cookies warm or at room temperature with a glass of milk!
