RIBEYE STEAK WITH CHEESY SCALLOPED POTATOES

For the Ribeye Steak:

2 ribeye steaks (1-inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon rosemary, chopped

1 teaspoon thyme, chopped

Salt and pepper to taste

For the Cheesy Scalloped Potatoes:

4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

1 small onion, finely chopped

2 tablespoons butter

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Prep the Potatoes:

    - Preheat your oven to 375°F (190°C).

      - In a saucepan over medium heat, melt the butter and sauté the chopped onion until translucent.

        - Add the heavy cream, garlic powder, salt, and pepper, and stir well. Allow the mixture to heat for 2-3 minutes without boiling.

          Layer the Scalloped Potatoes:

            - In a greased baking dish, layer half of the sliced potatoes.

              - Pour half of the cream mixture over the potatoes and sprinkle with half of the cheddar and Gruyère cheeses.

                - Repeat the process with the remaining potatoes, cream mixture, and cheeses.

                  - Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until golden and bubbling.

                    Prepare the Ribeye Steaks:

                      - While the potatoes are baking, take the ribeye steaks out of the refrigerator and let them come to room temperature (about 30 minutes).

                        - Rub both sides of the steak with olive oil, minced garlic, rosemary, thyme, salt, and pepper.

                          - Preheat a cast-iron skillet or grill over high heat until very hot.

                            Cook the Steaks:

                              - Cook the steaks for about 4-5 minutes on each side for medium-rare, or adjust the time to your preferred doneness. Use a meat thermometer to check (130°F for medium-rare).

                                - Let the steaks rest for 5-10 minutes before slicing.

                                  Serve:

                                    - Plate a generous serving of cheesy scalloped potatoes next to the ribeye steak.

                                      - Garnish the potatoes with chopped parsley for a fresh touch.
