Ingredients
  

1 pound corned beef, chopped

1 can (14 oz) sauerkraut, drained

1 loaf of rye bread, cubed

2 cups Swiss cheese, shredded

1 cup Russian dressing (or Thousand Island dressing)

4 large eggs

1 cup milk

1 teaspoon caraway seeds (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter.

      Layer Ingredients: In the prepared dish, layer half of the cubed rye bread evenly. Top with half of the chopped corned beef and half the sauerkraut, then sprinkle with half the Swiss cheese. Drizzle half of the Russian dressing over the top. Repeat with the remaining bread, corned beef, sauerkraut, and cheese, finishing with the remaining dressing.

        Whisk Eggs and Milk: In a mixing bowl, whisk together the eggs, milk, caraway seeds (if using), and a pinch of salt and pepper until well combined.

          Pour Egg Mixture: Pour the egg mixture evenly over the casserole, ensuring it saturates all layers.

            Bake: Cover the dish with aluminum foil and bake in preheated oven for 30 minutes.

              Uncover and Brown: Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the casserole is set.

                Garnish: Allow to cool for a few minutes, then garnish with fresh parsley before serving.
