1 ¾ cups all-purpose flour

1 cup granulated sugar

1 tsp baking soda

½ tsp salt

1 tsp unsweetened cocoa powder

1 cup vegetable oil

1 cup buttermilk, at room temperature

2 large eggs

2 tbsp red food coloring

1 tsp vanilla extract

1 tsp white vinegar

For the Strawberry Cheesecake Filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 tsp vanilla extract

1 cup fresh strawberries, pureed

½ cup fresh strawberries, diced for texture

For the Topping:

Fresh strawberries, sliced

Whipped cream (optional)

Chocolate shavings or red velvet crumbs for garnish (optional)

Instructions
 

Make the Red Velvet Cake Layers:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.

      - In a large mixing bowl, sift together the flour, granulated sugar, baking soda, salt, and cocoa powder.

        - In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.

          - Gradually add the wet ingredients to the dry ingredients and mix until smooth and just combined.

            - Divide the batter evenly between the prepared baking pans and smooth the tops.

              - Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

                Prepare the Strawberry Cheesecake Filling:

                  - In a medium bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.

                    - In a separate bowl, whip the heavy cream and vanilla until stiff peaks form.
