2 cups all-purpose flour

1 ½ cups granulated sugar

1 tsp baking soda

1 tsp salt

1 tbsp cocoa powder

1½ cups vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tbsp red food coloring

1 tsp vanilla extract

1 tsp white vinegar

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract (for filling)

12 oz white chocolate, chopped (for coating)

Sprinkles or edible glitter (for decoration, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients: In a large bowl, sift together the flour, baking soda, salt, cocoa powder, and sugar.

      Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until well combined.

        Combine Mixtures: Gradually add the wet mixture to the dry mixture, stirring until just combined. Do not overmix.

          Bake the Cake: Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

            Cool the Cake: Once baked, allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

              Prepare the Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and well-combined.

                Crumble the Cake: Once the cake is completely cool, crumble it into a large mixing bowl until you have fine crumbs.

                  Mix with Filling: Add the cream cheese filling to the crumbled cake and mix until fully combined and the mixture holds together when formed into a ball.

                    Form Cake Balls: Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for at least 30 minutes to set.

                      Melt the Chocolate: While the cake balls are freezing, melt the white chocolate in a microwave-safe bowl, heating in 20 second intervals and stirring until smooth.

                        Coat the Cake Balls: Using a fork, dip each chilled cake ball into the melted white chocolate, ensuring it’s fully coated. Allow excess chocolate to drip off and place back on the parchment paper.

                          Decorate: If desired, sprinkle some edible glitter or sprinkles on top before the chocolate sets.

                            Chill: Place the coated cake balls in the refrigerator for about 30 minutes to harden the coating.

                              Serve: Once set, your Red Velvet Cake Balls are ready to be enjoyed! They can be stored in an airtight container in the refrigerator for up to a week.
