200g feta cheese, crumbled

300g cherry tomatoes, halved

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Pita chips or crusty bread for serving

Instructions
 

Preheat your oven to 200°C (400°F).

    In a mixing bowl, combine the halved cherry tomatoes with olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Toss until the tomatoes are well-coated.

      Transfer the seasoned cherry tomatoes to a baking sheet lined with parchment paper, ensuring they are spread out in a single layer.

        Roast the tomatoes in the preheated oven for 20-25 minutes, or until they are blistered and slightly caramelized.

          In a food processor, combine the crumbled feta cheese and half of the roasted cherry tomatoes (reserve the other half for topping later). Blend until smooth and creamy.

            Taste the mixture and adjust seasoning if necessary. If it’s too thick, you may add a little water to achieve a desired consistency.

              Transfer the feta dip to a serving bowl, spreading it out evenly. Top with the remaining roasted cherry tomatoes and garnish with fresh basil leaves.

                Serve the dip with pita chips or slices of crusty bread for dipping.
