Ingredients
  

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1 cup vegetable broth

1 cup spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

1 tablespoon grated Parmesan cheese (optional)

Instructions
 

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, cooking until the onion becomes translucent, about 3-4 minutes.

    Pour in the vegetable broth and bring to a simmer. Let it cook for another 5 minutes to enhance the flavors.

      Reduce the heat to low, and stir in the heavy cream. Mix well until everything is combined.

        Add the chopped spinach and sun-dried tomatoes to the sauce, stirring gently. Allow the mixture to simmer for another 3-4 minutes until the spinach is wilted.

          Sprinkle in the dried oregano and basil, and season with salt and pepper to taste. Continue to simmer for an additional 2-3 minutes.

            If desired, stir in grated Parmesan cheese for an extra layer of richness and creaminess.

              Once the sauce has thickened slightly, remove from heat.
