2 large eggs

1 cup milk

1 cup fresh raspberries (plus additional for garnish)

2 cups shredded coconut (sweetened or unsweetened)

1 ½ cups powdered sugar

½ cup unsweetened cocoa powder

½ cup boiling water

Preheat your oven to 350°F (175°C). Grease and flour a rectangular baking dish (approximately 9x13 inches) or line it with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

          Gradually mix in the dry ingredients alternating with the milk, starting and ending with the flour mixture, until just combined.

            Gently fold in the fresh raspberries, being careful not to break them up too much.

              Pour the batter into the prepared baking dish, smoothing out the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Allow the cake to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.

                  Once the cake is cooled, cut it into squares (about 2x2 inches).

                    For the icing, sift together the powdered sugar and cocoa powder in a bowl. Gradually mix in the boiling water until smooth and well combined.

                      Place the shredded coconut in a shallow dish.

                        Dip each cake square into the chocolate icing, allowing any excess to drip off.

                          Roll the iced cake square into the shredded coconut until fully coated. Repeat for all squares.
