1 cup fresh raspberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/2 tsp cinnamon (optional)

1/4 cup chopped fresh mint (for garnish)

Powdered sugar for dusting (optional)

Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or spatula to blend until smooth and creamy. Set aside.

    Make the Crust: In a separate bowl, mix the graham cracker crumbs, melted butter, and cinnamon (if using) until well combined. Press the mixture firmly into the bottom of a muffin tin (12-count) or silicone molds to create a crust.

      Assemble the Bites: Spoon a generous dollop of the cream cheese mixture on top of the graham cracker crust, filling each mold about 3/4 full. Gently press a raspberry into the center of each cream cheese filling.
